BEARY BUTTERMILK GOOD PANCAKES!

It is a lovely Spring Monday morning here!  The children were asking for pancakes today and I decided to try a new recipe in my collection.  I wanted fluffy good pancakes.  I make pancakesa lot and we always just aren't always quite happy with them. These were wonderful!  And we used our BEAR pancake pan - a new item at MarmeeDear's Kitchen Wares.

THE RECIPE:

Place in a mixing bowl in this order:

3 cups all-purpose UNBLEACHED flour (or you can use freshly ground golden wheat flour)
3 Tbsp. sugar
3 tsp. baking powder - aluminum free
1 1/2 tsp. baking soda
3/4 tsp. salt

Mix well and then make a well and add in:

3 slightly beaten eggs
3 cups buttermilk
1/2 cup milk
1/3 cup melted butter

Mix well with a whisk but do not overbeat.  Use 1/2 cup for each pancake and put on a hot griddle.  (The pan/griddle you use to cook pancakes makes a big difference in the finished pancake!)  Flip with a large flat spatula when one side is very bubbly and slightly dry.  Flip only once.  Serve hot with butter and maple syrup or your favorite fruit syrup. NOTE: Not so thick (as in "it was sort of a flop? And didn't thicken!") Homemade jams are perfect for a pancake topping! 



We also got our BEAR pancake pan this morning to try them out.  You must spray your animal critter pancake pan with pan spray.  Then only fill it to just cover the bottom of the pan.  Heat it until bubbly and slightly dry on a stove burner then flip over carefully onto your pancake griddle.  Serve hot to your own sweet "baby bears".
